Paleo Zucchini Noodles with Creamy Pesto Avocado Dressing


This delicous paleo ‘spaghetti’ with a creamy avocado dressing is made with spiralized zucchini to substitute the pasta.

  1. 5 Zucchinis
  2. 3 Avocados
  3. Drizzle of Olive Oil
  4. Dash of Fresh Lemon Juice
  5. Small Handful of Pine Nuts
  6. Pinch of Salt
  7. Pinch of Black Pepper
  8. A Small Handful of Basil
  9. 2 Cloves of Garlic
  1. Spiralize the zucchini and set aside.
  2. Put all other ingredients in a blender and blend until smoooth, adding more olive oil if necessary to produce a runnier dressing.

  1. You can leave the skin on but I peeled them off to make the zucchini appear lighter in colour, like real pasta.
