I love Brussels sprouts, absolutely love them and quite frankly don’t understand why more people don’t. (They’re a superfood, you know…)

I could literally eat them on their own, albeit with loads of butter and a sprinkle of salt and black pepper.

Iโ€™ve added to my favourite vegetable some bacon, sweet chestnuts and quinoa, to create a flavoursome superfood meal.

When looking up the health benefits of Brussels sprouts for this post, I was pleasantly surprised to see how many health benefits they actually have. These tasty balls of goodness are one of the top twenty most nutrient dense foods available and are so full of vitamins and nutrients that they can even be considered a superfood!

(I must subconsciously be having a thing for superfoods lately as, without even knowing, my last few food posts have all included some type of superfood, from pomegranate to cocoa nibs… and now Brussels sprouts! )

Just one cup of Brussels sprouts supplies the body with over 20 essential vitamins! One cup contains over 200% of the recommended daily amount of vitamin K, over 120%  of vitamin C, and 10 percent or more of one’s vitamin A, vitamin B-6, folate, potassium, and manganese needs for the day.

This superfood is also low in fat and a great source of fibre, making Brussels sprouts an excellent vegetable to aid in weight loss.

Another property of Brussels sprouts is that they are high in antioxidants, which are known for their anti-aging properties (the vitamin C in Brussels sprouts assist with the body’s formation of collagen) and have also been proven to fight chronic diseases.

The sulfur content in Brussels sprouts (which is often released when overcooked and is probably the reason why some may find the smell of sprouts off-putting) makes them ideal for detoxing as sulfur helps to rid the body of toxins.

So, in a nutshell, Brussels sprouts will keep you looking young, slim and healthy! What’s not to like?

Try this delicious bowl of sprouts, mixed with warm bacon, chestnuts and seasoned quinoa today. The soft, creamy and almost nutty taste of the sprouts compliments all the other ingredients so well and the whole meal has made me fall in love with Brussel sprouts even more than before… especially now that I also know how good for me they truly are!

 

Oven Roasted Brussels Sprouts with Bacon, Chestnuts & Quinoa

Iโ€™ve added to my favourite vegetable some bacon, sweet chestnuts and quinoa, to create a flavoursome superfood meal.

Ingredients

  • 200g Brussels sprouts
  • 1 cup quinoa, uncooked
  • 100g whole chestnuts
  • 6 thick smoked bacon rashers, cubed
  • 2 organic gluten-free stock cubes
  • 2 tbsp. extra virgin olive oil
  • Knob butter
  • Pinch of salt
  • Pinch of pepper
  • Handful of fresh parsley

Instructions

  1. Rinse and prepare the Brussel sprouts by removing the first few layers (if necessary) and using a knife to make two slight indents in the bottom of each sprout to produce an 'x'.
  2. Sprinkle on a little sea salt, pepper and oil over the Brussels sprouts and place in a tray and in the oven for approximately twenty minutes or until tender and golden in places.
  3. Remove from the oven and set aside.
  4. Whilst the Brussels sprouts are in the oven, rinse the quinoa and cook per the instructions on the packet. Add to the quinoa the stock and set aside once cooked.
  5. Fry the bacon and set aside.
  6. Add the cooked quinoa to the Brussels sprouts and carefully mix together. Add a bit more salt and pepper, if needed
  7. Add the bacon, chestnuts and parsley to the quinoa and sprouts and serve.

Notes

A few minutes before removing the Brussels sprouts, you can add the chestnuts to the oven to give them a crunchier texture (or you can just add the chestnuts to the dish before serving).
